Although he utilizes a blend from Jackson, Wyoming’s Vertical Harvest, he suggests using any spicy blend or mustard microgreens. Should you find yourself with leftover vinaigrette, don’t shy away from adding the sweet and tangy condiment to any salad or vegetable.
